Porcini or King Boletes are starting their season out on the northern coast of California. Boletus edulis are large meaty mushrooms with a mild sweet nutty flavor. In California they tend to associate with pines (Monterey & Bishop) as well as spruce. Picking or cutting them makes no significant difference (come with data to backup your claims if you want to discuss this), but my personal best practices are to clean them while in the forest and leave the trimmings for wildlife. .
