So many of you have asked me over the years “what's your favourite pasta”? And it might be surprising to you but really it’s the one and only Spaghetti al pomodoro! 🍅🍝 Obviously the quality of the ingredients here have to be at their best to get an incredible result. You need to buy the best quality extra virgin olive oil you can find. If you don’t buy the right pasta, you cannot make a good dish, so you need to buy the best bronze drawn dry pasta too. And for the tomatoes, this is of course a summer dish and they are still in season so let's make the most of them! I have used a mixed of cherry tomatoes and baby plum here. The Ultimate healthy tuna melt There is something about a tuna melt that just SLAPS, it is one of my favourite sandwiches and this is my nutritionaifed version with a lighter tuna not mayo mix, and extra virgin olive oil garlic bread. You will need 1 tin tuna in brine 1 tsp white vinegar 1 tbsp capers, chopped 1 spring onion, chopped 1 heaped tbsp greek yoghurt 1 tsp American mustard Pinch of salt and pepper 2 slices of bread of choice, I used sourdough. 2 tsp extra virgin olive oil 1 chopped garlic clove Fresh parsley 50g of cheese of choice, I used taleggio but a good sharp cheddar, gruyere or any cheese of your fancy. 1. Mix the tuna with chopped spring onions, capers, yoghurt, mustard, white vinegar, salt and pepper. 2. Mix the olive oil with finely chopped garlic, parsley and season with salt and pepper. Brush the garlic olive oil over the bread on one side only, flip over and start to fill the bread with the tuna mix. Slice the cheese and lay over the tuna and press the sandwich together. 3. If you have an air fryer, cook at 200c for 3 minutes on each side until golden brown or in a frying pan, cook on a low/medium heat on either side for 4 minutes. 4. Gnocchi and leek bake You will need to serve 4 2 large leeks 1 large courgette 1 clove garlic Sprig fresh thyme 500g gnocchi 1 tsp mustard 350ml chicken stock (made using 1 chicken stock cube) 200g half fat crème fraiche 1 heaped tbsp flour Parmesan cheese 1. Preheat the oven to 200c fan. 2. Slice the leeks into rounds. Core the courgette and cut into small dice. Mince the garlic. 3. Sweat the leeks, courgette and garlic in 1 tbsp olive oil with a pinch of salt and fresh thyme for 10 minutes. 4. Sprinkle in the flour and mix for 2-3 minutes. Pour in 350ml chicken stock, season with black pepper and simmer for 10 minutes to thicken. Stir in the crème fraiche, mustard and gnocchi, simmer for a minute or so then tip into a baking dish. 5. Cover with lots of grated Parmesan and bake for 15 minutes until the top is golden and delicious.
