🇮🇩 Nasi Goreng is a delicious Indonesian-style fried rice that is also popular in Malaysia. The key ingredients here are kecap manis and terasi (shrimp paste). Terasi is salty with an umami taste, shrimp aroma and a spicy kick. Skip if you can’t find it or if the smell is too pungent for you. But the kecap manis is not negotiable 😅, you can find this in most Asian grocery stores. Nasi Goreng Udang (Shrimp Fried Rice) Paste: 4 small shallots 4 cloves garlic 4 bird’s eye chilies or to taste 1 lb shrimp, peeled and deveined 1 tablespoon oil 2 tablespoons butter, divided 2 teaspoons terasi (shrimp paste) 2 eggs 3 cups cold, day-old rice 2-3 tablespoons kecap manis 1 tablespoon soy sauce 1/2 teaspoon white pepper or to taste Green onion, slice Salt Directions: -Pound the paste ingredients until fairly smooth, you can also roughly chop this. -Add the oil into a hot wok and add the shrimp. Sprinkle some salt and 1 tablespoon of the butter. Cook for 3-4 minutes depending on the size. Remove and set aside. -add the spice paste and terasi into the wok, adding a bit more oil if needed. Cook for 3-4 minutes, careful not to burn the terasi. Add the eggs and scramble. Add the rice, shrimp, kecap manis, soy sauce, white pepper and the remaining butter. Give this a toss until the rice is coated with the sauce. Remove from heat and add the green onion. Serve with your favorite toppings. Toppings: crispy fried egg, sliced tomatoes and cucumbers, kerupuk udang (shrimp crackers), fried onion and sambal terasi. These are just some of my favorites ❤️🤍 #nasigoreng #indonesianfood
