Will It Dumpling Ep. 4: Pan-Fried Pizza Baos 🍕 @YumCrunch This one smacked!! #PlayWithYourFood Ingredients Dough * 1 room temp water * 1 tsp yeast * 1 tsp sugar * 450 grams flour * 1/2 tsp salt Sauce * 1/4 cup olive oil * 4 cloves garlic(sliced) * 3 sprigs basil * 1/2 onion * 28 oz crushed tomatoes * Salt to taste Bao+Cooking * Tomato sauce(about 1 tsp) * Diced pepperoni(2 pieces) * Full fat low moisture mozzarella cheese(1-2 pieces) * 3 tbsp olive oil * 1/4 cup water * Parmesan cheese(grated) * Basil(chiffonade) Instructions Dough 1. Combine water, yeast and sugar. Whisk together flour and salt. Once you see bubbles created from the yeast, add that to the flour and mix until a shaggy dough comes together. 2. Knead for 10 minutes until smooth. Cover and let rest for 1 hour until doubled in size. Sauce 1. In a heavy bottom pot heat olive oil on medium low heat. Add garlic and basil and simmer for 5 minutes to infuse the oil making sure not to burn the garlic. 2. Add onion, and crushed tomatoes. 3. Simmer for 30 minutes and season with salt. Let cool down to room temperature. Bao+Cooking 1. Cut dough in half and roll into a rope. Cut the dough into 20-25 gram pieces. Make sure to use flour so the pieces don’t stick together 2. Flatten and roll the dough into a thin disk. Place a tsp of tomato sauce and your choice of toppings. 3. Arrange baos to a pan with olive oil and turn heat to medium. 4. Once it starts to sizzle add water and cover with a lid. 5. Steam for 8-10 minutes then remove the lid and let the water evaporate to crisp up the bottom. 6. Pan-Fried Chicken Tikka Masala Baos for my new series with @YumCrunch #PlayWithYourFood Ingredients Naan * 3/4 cup warm water * 3 tsp yeast * 1 tsp sugar * 450 grams flour * 1 tsp salt * 1/2 cup greek yogurt * 2 tbsp olive oil * 1/3 cup ghee * 3 cloves garlic * 1 tbsp chopped cilantro Filling * 1 lbs ground chicken * 1/4 cup greek yogurt * 2 tbsp lemon juice * 4 cloves minced garlic * 1 tsp minced ginger * 1 tsp cumin * 1 tsp garam masala * 1 tsp Kashmiri chili powder * 1 tsp salt Sauce * 3 tbsp ghee * 1/2 chopped onion * 5 cloves minced garlic * 1 tbsp minced ginger * 1 tsp cumin * 1 tsp coriander * 1 tsp turmeric * 1 tsp Kashmiri chili powder * 1 tsp garam masala * 1 tbsp tomato paste * 14 oz crushed tomatoes * 1/2 cup water * 1 tsp fenugreek * 1/2 cup heavy cream Instructions Naan 1. Combine warm water, yeast and sugar then whisk together flour and salt. Combine yeasty water with flour mixture along with greek yogurt, and olive oil. 2. Mix until a shaggy dough comes together and knead for 15 minutes until smooth. 3. Rest the dough for an hour. 4. Combine ghee, minced garlic and cilantro to brush on top later on. Filling 1. Combine all ingredients in a bowl and marinate in the fridge for 30 minutes. Sauce 1. Sauté onions, garlic, and ginger with ghee until translucent and aromatic. 2. Add spices and cook for a couple minutes then add tomato paste and cook for another few minutes. 3. Add crushed tomatoes, water, fenugreek, and heavy cream. Simmer on low for 30 minutes. Folding 1. Divide the rested dough in half and roll into a rope. 2. Cut the rope into 20 gram pieces, flatten the dough piece, and roll into a thin disk. 3. Place 2 tablespoons of filling in the center of the wrapper and fold using your thumbs and index fingers to create pleats. Cooking 1. Add 4 tbsp of neutral oil to a pan and place the baos around the pan. 2. Turn heat to medium low and once it starts to sizzle, add 1/4 cup water and cover with a lid. 3. Steam for 10 minutes then remove the lid to let the residual water evaporate so the bottom becomes crunchy. 4. Brush ghee, garlic, and cilantro on top and serve with the sauce. #Recipe #bao #chickentikkamasala #fusion #dumpling
