Kimchi Sujebi 🇰🇷 I’ve been on a comfort food kick the last few weeks and Sujebi is hitting the spot Dough Ingredients: 2 cups flour 3/4 cup water 1 tbsp vegetable oil or sesame oil Pinch salt Soup ingredients: 2 quarts water 2 oz-around 20 dried anchovy 1 sheet dried kelp 2 potatoes around 1 lb 1 yellow onion 5 cloves garlic 1 1/2 cup cut kimchi 3/4 cup kimchi brine 2 tbsp soup soy sauce (or just salt) Scallions for topping. Directions: For the dough add the flour, and salt to a bowl. Make a little well and add the water and oil. Mix until it comes together into a dough, then knead for 10-15 minutes until you have a smooth ball. Cover and place in the fridge until you need it, at least 20 minutes. To make the broth, wrap up the anchovies in a pouch or a bit of cheesecloth so it’s easier to fish out later. Place a pot on the stove and add the water, anchovies, and seaweed. Bring it to a simmer and let it go for 10 minutes. Remove the anchovies and discard. Save the seaweed and cut it into bite size pieces to add back in later. Add in the cut potatoes and onions, simmer for 5 minutes. Add the sliced garlic, kimchi, kimchi brine, and previously saved seaweed. Cover and gently simmer for 20 minutes until the kimchi and the potatoes are tender. Last step is to grab your dough and make the noodles. It’s pretty straight forward, hold the dough with your left hand pull and stretch it pretty thin with your right hand and tear it into the soup. Preaching the ascorbic acid gospel. In this simple and pretty crude test I just seasoned one bowl of avocado mash to taste with salt and lemon juice, the other with just a tsp of ascorbic acid and no additional seasonings. Left both with no wrap touching the top to prevent a skin. Left both for 3 days in the fridge. And the ascorbic acid didn’t oxidize at all. The other little test I sliced some apples then dunked them in two solutions, one with ascorbic acid and one with lemon juice. One set dunked in nothing as the control. Left out for a few hours. The lemon juice set looked similar to the one dunked in nothing surprisingly. Ascorbic acid (vitamin C) is better at preventing browning and oxidation of foods than citric acid or lemon juice. And in the quantities used to prevent browning it doesn’t impart much flavor. Keep your guacamole green for a bit longer or it’s used a lot in canning and fruit preserves. Or to prevent browning in foods you simply don’t want to add citrus flavor to. #tiktokfood

Beef rendang 🇮🇩 In the sleek and sexy all white Dutch oven by @madeincookware Ingredients: 4 lb boneless short rib 2 stalks lemongrass (white part only) 4 shallots 4 birds eye chili 1’ knob ginger 1’ knob galangal (if you can’t find it add a touch more ginger) 8 cloves garlic 1/2 tsp ground turmeric ( or a piece of fresh) 1 tsp coriander 2 cans coconut cream 6 Makrut lime leafs Toasted coconut to garnish Method: Begin by blending shallots, 1 lemongrass stalk, garlic, birds eye chili, ginger, galangal, turmeric, and coriander. Heat up your Dutch oven over medium heat and add a few tablespoons of oil and begin to fry the paste until it’s extremely fragrant, around 3 minutes. Add the cubed short rib and stir and fry for a few more minutes. Add the coconut cream, the other smashed lemongrass stalk, and lime leaves. Cover and simmer for 1 hour 45 minutes. Remove the lid and turn the heat up, the sauce will thicken and the coconut fat will begin to separate and fry the short rib. You can stop here for a more curry like rendang, or continue to fry til it’s almost dry (which is my favorite way to eat it) serve with rice, toasted coconut, fresh chilis or sambal. #food #madeinpartner #tiktokfood
