Absolutely DELICIOUS Low Carb & GF Pumpkin Spice Muffins with Cinnamon Crumb Topping! ๐ Ingredients: muffins - 2 1/2 cup almond flour - 3 large eggs, whisked - 1/2 cup pumpkin or butternut squash puree - 140g white sugar replacement (I used monkfruit sweetener from Lakanto) - 55g unsalted butter, melted - 2 tsp baking powder - 2 tsp pumpkin spice - 1 tsp vanilla extract - 1/2 tsp salt crumb topping - 3/4 cup almond flour - 2 tbsp unsalted butter, melted - 1 1/2 tbsp white sugar replacement (I used monkfruit sweetener from Lakanto) - 1 tsp ground cinnamon - 1/2 tsp vanilla extract glaze (optional) - 2 tbsp icing sugar replacement (I used monkfruit sweetener from Lakanto), sifted - 1 tbsp caster sugar replacement (I used monkfruit sweetener from Lakanto), sifted - 2 tbsp or more heavy cream - 1-2 tsp milk of choice (if needed) - 1/4 vanilla extract Instructions: 1. Crumb topping: Mix the dry ingredients, then add vanilla extract and butter and mix well until crumbs are formed. 2. Muffins: Mix the dry ingredients, then pour in eggs, add pumpkin puree, butter and vanilla extract. Mix well. The mixture wonโt be liquidy. If you feel like it is too dry, add a bit more butter. 3. Preheat oven to 180C/350F. Line a muffin tray with cupcake liners. 4. Using a cookie scoop spread the mixture evenly between the liners. Shake try so the mixture settles. Top with the crumbs and gently press onto them so they donโt fall off when ready. Bake for 20-23 min, check if ready with a toothpick, it needs to come out clean. 5. Glaze (optional): Mix both sugar replacements, mix in heavy cream tbsp by tbsp. Add in vanilla extract. If too thick, add in 1 or 2 tsp of milk. If it becomes too liquid, add more caster sugar replacement. If you donโt have caster sugar replacement, you can omit it, but your glaze wonโt be as thick and you will also need to use way less heavy cream and omit milk. 6. Let your muffins cool down completely. Pour on glaze right before serving.
