Making one of my favorite fall salads today using @Earthbound Farm organic baby arugula & baby kale, butternut squash, apples and more fall ingredients that I’ll include below! It brings me so much joy to slow down and make a meal like this with organic ingredients knowing I'm fueling my body with the best! Ingredients- For the DRESSING: Olive Oil (¼ cup) Dijon Mustard (2 tsp) Apple Cider Vinegar (2 tbsp) Honey (1 tbsp) Garlic (½ clove minced) For the SALAD: Baby Kale and Arugula (I used about 1.5 cups each) Rice (1 cup) Butternut squash (2 cups) roasted for 25 mins at 425 degrees F.
