Meal prep with me for the week 💃🏼 Breakfast: Greek Yogurt Parfait 1.5 serving Dannon light + fit Greek yogurt Handful of raspberries Handful of blueberries Mix in honey to taste 1 serving of granola (keep this on the side so it doesn’t get soggy in the fridge) Meal #2: Buffalo Chicken Wrap 1. Cook to large chicken breasts on pan, I used chile lime and garlic salt for seasoning 2. Once cooked and cooled, shred with fork 3. Toss the shredded chicken with buffalo sauce or hot sauce 4. Assemble your wraps (I used carb balance tortillas, onion, pepper, feta cheese and lettuce) Disclaimer: if you pre assemble the wraps, they will only last 3 days in the fridge. If you want them to last longer, keep ingredients on the side and assemble the wrap the day of. Meal #3: Shrimp Fried Rice 1. Take one bag of medium shrimp, season with salt + pepper, pan fry until cooked, set in a bowl to the side 2. Now that the pan is cleared, add 1/2 onion, 3 green scallions, 2 garlic cloves and 1/2 teaspoon minced ginger and stir for about a minute 3. Add the frozen peas and carrots and stir fry for about 1 to 2 minutes 4. Move the veggies to the side and add 3 beaten eggs quickly scrambling them 5. Once cooked through, mix the eggs & veggies together 6. Now add 4 cups of cooked rice (make sure it’s cooled and firm) 7. Add the shrimp back to the pan 8. Add 3 tbsp soy sauce & 2 tsp sesame oil 9.
