1-hr vs. 4-hr crispy French Fries 🍟 these are the best fries I’ve ever made. @YumCrunch 1 hour French Fry Recipe 1000 g – Russset Potatoes (about 4) Oil or duck fat, for frying 1. Peel and cut potatoes into thin batons 2. Soak the potatoes in cold water for 10 minutes, then rinse to remove excess starch. 3. Pat potatoes dry, then heat duck fat to 300 F and fry potatoes for 5 minutes until lightly colored. Drain on a wire rack and place in the freezer for 30 minutes to dry out the exterior. 4.
