Easy weeknight meal in under 30min! Creamy Cajun spiced gnocchi served with last nights chicken schnitzel. Heres recipe below x Creamy Cajun Gnocchi x2 500g packs of fresh gnocchi (found in the fridge) 1 finely chopped red onion 4 crushed garlic 2 cups thickened cream 1 teaspoon chicken stock powder dissolved in 1/4 cup water 1/2 cup parmesan 1 teaspoon sweet paprika 1 teaspoon dried oregano 2 heaped tablespoons Cajun spice 1 teaspoon garlic powder 1 tablespoon butter & drizzle of olive oil Start boiling a pot of salted water. In a seperate pan with some olive oil & some butter cook the onions for a minute before adding the garlic & cook for another minute. Add your paprika, Cajun spice, oregano & garlic powder. Give it a mix then add the chicken stock to before adding the cream & parmesan. Leg that simmer on low while you add your gnocchi to the boiling water. Once they start floating to the top (1 minute max) start adding them to the creamy sauce. I served with left over chicken schnitzel & freshly grated parmesan.
