Tagine Makfoul:Ā Ā Tender savory meat topped with onions and sweet, caramelized tomatoes.Ā Ā I canā€™t think of a better dish to cook in my beautiful new @kamsah tagine. #ad ā£ For The Tagine: ā£ 2.75 pounds beef or lamb (shanks or stew meat) ā£ 1 large onion, finely choppedā£ 3-4T olive oilā£ 2t ground gingerā£ 2t ground turmericā£ 1t ground cinnamonā£ 1 cinnamon stick ā£ 1t ground black pepperā£ Salt, to tasteā£ Pinch of Saffron, soaked in 1/2c of warm waterā£ 1 small bouquet of cilantro ā£ ā£ For The Tomato & Onion Topping (Makfoul)ā£ 2 onions, sliced 1/4ā€ thick ā£ 3-4 tomatoes, sliced 1/4ā€ thickā£ 1t cinnamon ā£ 3T sugar or honey ā£ ā£ In a tagine heat olive oil over medium heat. Add the chopped onions, meat, spices and salt.Ā Ā Stir, ensuring olive oil and spices coat the meat.Ā Ā Cover and cook for 5 minutes to lock in the flavors.Ā Add saffron water followed by the cilantro and continue to cook uncovered for a few minutes.Ā Add water to barely cover the meat, bring to boil then reduce the heat to low, cover and simmer for about 2 hours (time will vary depending on the cut of meat used) until the meat starts to become tender.ā£ ā£ Once tender, remove tagine lid and spoon out about 1/2c of liquid.Ā Ā This is also a good time to taste and adjust seasoning as needed.Ā Ā ā£ ā£ Add sliced onions on top of the meat to completely cover the meat below. Spoon the tagine cooking liquid evenly over the onions.Ā Ā Add a layer of cut tomatoes on top of the onions sprinkling generously with cinnamon and sugar.Ā Ā ā£ ā£ Cover and let cook for an additional 35-45 minutes until the onions are cooked and the tomatoes are nicely caramelized.Ā Ā ā£ ā£ If you prefer a thicker sauce, you can cook the tagine uncovered for a few more minutes to reduce the liquid slightly. Bid o Maticha, affectionally known as ā€œBM,ā€ is a delicious dish of sautĆ©ed tomatoes and eggs.Ā Ā It is a breakfast staple in Moroccan households and is simple, easy to prepare, packed with nutrition and absolutely delicious.Ā Ā A great way to start the day, especially for those sending kids back to school this month!Ā Ā #ad Ā ā£ ā£ 3T olive oil, plus extra for finishingā£ 5-6 medium tomatoes, gratedā£ 1 medium onion, grated or finely chopped (optional) ā£ 2 cloves of garlic, mincedā£ 1 teaspoon ground cuminā£ 1 teaspoon paprika ā£ 1/2 teaspoon ground black pepper ā£ 4 @Egglandā€™s Best eggs ā£ Salt, to taste ā£ Fresh parsley, chopped (for garnish)ā£ ā£ Heat the olive oil in a tagine or large skillet over medium heat.Ā Ā Add onion, sprinkle with salt and sautĆ© until translucent.Ā Ā Add the minced garlic and let cook for a minute until fragrant.Ā Ā Add tomatoes, ground cumin, paprika, black pepper and salt to taste.Ā Ā ā£ ā£ Mix well and cook tomato mixture over low heat for about 10-15 minutes, until the sauce thickens and the flavors intensify.Ā Ā Crack eggs directly into the skillet, mixing gently to break the yolks.Ā Ā Cover and let eggs cook over medium low heat for about 4-5 minutes (depending on how runny you prefer your eggs).Ā Ā The eggs will continue to cook in the pan after you remove the dish from the heat.Ā Ā ā£ ā£ Sprinkle with parsley and drizzle with olive oil.Ā Ā Serve with crusty bread or Moroccan Khobz and enjoy!ā£ ā£ A few notes:ā£ Eggs can optionally be scrambled and poured into the tomato mixture or served sunny side upā£. Canned crushed or diced tomatoes can be substituted for fresh tomatoes.
